As leveduras vínicas não convencionais na produção de vinho - Bibliografia

A levedura Saccharomyces cerevisiae é responsável pela fermentação alcoólica, sendo a mais utilizada na produção do vinho. A sua contribuição para o aroma e sabor do vinho ultrapassa o processo fermentativo em si, com a produção de novos compostos que contribuem para as propriedades organolépticas do vinho. No entanto, existem outras espécies de leveduras que fazem parte do microbioma das uvas e dão início ao processo fermentativo do mosto. A utilização racional destas leveduras vínicas não convencionais nas fases iniciais da fermentação, particularmente estirpes autóctones, contribui para a produção de vinhos enriquecidos com atributos sensoriais de regiões típicas de um país.
